Seafood paella

Chef’s Notes 

 

The carbon disk is an ideal pan to cook paella. It is easy to fry ingredient materials and can let a cover is made, and taste condense, and there is a beautiful burn. Without a mussel, you can substitute it in a short-necked clam. In that case, the short-necked clam produces sand beforehand, and use it. It is the art of the taste that you open a cover for finish and splash water and bake a bottom brown, and make a scorched part. If you hear a sound with the crackle, it is a signal burnt brown.
